1/2 teaspoon ground black pepper

Green onions, for decoration
Place the vermicelli noodles in a pot full of water and boil for 30 minutes. Drain, then cut into small pieces. Leave it aside. Shred the cooked chicken, aiming for a stringy consistency. Sauté the onions in a pan until soft, then pour in the chicken stock and bring to a simmer. Once boiling, lower the heat and simmer for 5 minutes. Increase the heat again and bring the soup to a boil, this time adding the noodles. Add the chicken and cornstarch and simmer for 15-20 minutes. Lightly beat the eggs and mix gently. Season with salt and pepper and cook for another 3 minutes. Remove from the heat and serve crushed with green onions.
Meatless Ginger Garlic Soup
What you need:

3 onions, diced

2 whole star anises

1 1/2 heads bok choy, roughly chopped

1 bunch of green onions

5 1/2 cups low-sodium chicken broth

1 1/2 cups sliced crimini mushrooms

3/4 cup rice noodles

2 tablespoons of fresh grated ginger

2 spoons of soy sauce

1 spoon of olive oil

Red pepper flakes, on top

Sesame seeds, on top
Cut the green onions, separating the white part from the green part. Finely chop the white part and reserve the green part for the top.
Heat the olive oil in a saucepan over medium heat, then cook the shallots until translucent, about 4-5 minutes. Add the garlic, onion whites, and ginger and cook, stirring occasionally, until the garlic and ginger are fragrant, about 1-2 minutes.
Add the chicken stock and bring to a boil. Add anise and soy sauce, cover and continue to simmer for 10 minutes. When ready, remove the lid and throw in the star anise. Add the bok choy, mushrooms and noodles. Boil for 6-8 minutes more.
Remove from heat and divide into serving bowls. Before serving, sprinkle with red pepper flakes and sesame seeds.
