The undried berry is also widely used in Tibetan, Nepalese and Bhutanese cuisine as the area does not support much agriculture or cultivation and there are not many spices available. On the west coast of India, it is used in Konkani cuisine. In Indonesian cuisine, peppers are ground into a paste with other ingredients and used as a side dish to various meat dishes. Their tangy citrus flavor, which creates a unique tingle in the mouth, lends itself to heavy preparations and makes them a good addition to sauces and sauce bases. Szechuan pepper also has a reputation for being able to mask unpleasant odors and tastes, and in some regions old or rotten meat is often masked by the spice’s strong flavor.
